    Our team has extensive experience in evaluating the effect of extracts and plant raw materials rich in phenolic compounds and carotenoids with microorganisms that cause food spoilage (Listeria monocytogenes, Salmonella, staphylococcal enterotoxins, E. Coli etc.), in elucidating various mechanisms of plant microbiostatic action on food matrices. The team was participated in national and international projects, aimed at analyzing plant metabolites, their antimicrobial and bactericidal activities: State Project ”Decreasing raw material and food products contamination with pathogenic microorganisms” and COST CA15136 – “European network to advance carotenoid research and applications in agro-food and health EUROCAROTEN”.

  • Brief description of your project / the project you would like to join:

    We would like to contribute to project by evaluating the effect of phytocompounds from extracts with microorganisms that cause food spoilage (Listeria monocytogenes, Salmonella, staphylococcal enterotoxins, E. Coli et al.), to elucidate their various mechanisms of microbiostatic action on food matrices. Their microbiocidal and microbiostatic effect will be determined in relation to the antibiotics commonly found in some foods. The research methodology will include the analysis of the composition of the extracts and the research of their microbiostatic effect in situ and in vitro; modeling food matrices (emulsions, gels, etc.) and comparing antimicrobial activity. For the realization of the project will be applied classical microbiological analysis methods, RT-PCR, physico-chemical, UV / dream spectroscopy, IR, HPLC / MS, electron microscopy.
